Apricot Sauce

Apricot Sauce

l25g dried apricots, soaked overnight in 600ml water
50g caster sugar
2 teaspoons lemon juice

Place the apricots and their soaking liquid in a pan. cover and simmer for 15 minutes. Add the sugar and lemon juice, stirring until the sugar has dissolved. Sieve or work in an electric blender or food processor until smooth. Serve hot or cold with vanilla ice cream.

Makes 450ml
