Ambrosia Fruit Salad
300ml carton thickened cream
2 Tbsp icing sugar
1/4 cup plain yoghurt
1/2 cup flaked almonds
1 cup marshmallows, chopped
450g can crushed pineapple, drained
310g can mandarin segments, drained
1/2 cup coconut
1. Combine cream and sifted icing sugar in a small bowl, beat with electric mixer until firm peaks form.
2. Gently fold in yoghurt, almonds, marshmallows, pineapple, mandarin segments and coconut.
3. Spoon into individual glasses and decorate with toasted flaked almonds, if desired.
