Tollhouse cookies

125g butter
1/4 cup peanut butter
1 cup brown sugar, firmly packed
1 egg, lightly beaten
3/4 cup plain flour
3/4 cup SR flour
1/2 cup rolled oats
1 cup choc chips
1/2 cup chopped nuts

Melt butter and peanut butter on stove until just combined. Allow to cool slightly; add brown sugar and beaten egg, mix well. Mix combined flours, rolled oats, choc chips and nuts together in large bowl; add the peanut butter mixture. Mix well. Roll a tablespoonful into balls then flatten slightly onto a lined baking tray. Cook on 180C for 12-14 minutes or until golden. Stand for 5 minutes then transfer to a wire rack.

Can be frozen.
