Ginger and Lime Friands
5 egg whites, beaten until soft peaks
1 cup almond meal
1/2 cup plain flour
1 Tbsp lime juice
180g butter, melted
250g icing sugar
grated rind of 1 lime
1/2 cup Buderim Ginger Small Dice
2 Tbsp slivered almonds
Preheat oven 190c. Grease thoroughly a friand tin.
Mix all ingredients together except slivered almonds and 2/3 fill each friand tin. Sprinkle with the slivered almonds.
Bake for 25 minutes or until golden and the friand has pulled away from the edges slightly. Leave in the tin to cool.
The tropical flavour combination of lime and ginger match perfectly with these light buttery cakes.
They also freeze very well.
