Apricot and hazelnut friands

Apricot and hazelnut friands

60g (1/2 cup) plain flour
60g (1/2 cup) hazelnut meal
125g (1 cup) caster sugar
125g egg whites
1/4 cup melted unsalted butter
Pinch salt
2 tbsp honey
Dried apricots
Extra melted butter for greasing the friand tins

Preheat oven to 200C. Sift the flour into a mixing bowl and add almond meal and sugar. Whisk egg whites with salt until stiff. Fold through dry ingredients, then butter, honey and sliced dried apricots.

Grease the friand tins, then spoon in mix. Bake for about 15-20 minutes. Allow to cool in tins.
