Cannelloni with Tasty Mince Filling

This recipe is not suitable to freeze.

8 cannelloni shells
1/4 teaspoon oil
1 tablespoon grated parmesan cheese

Tasty Mince Filling:
1 teaspoon oil
1 clove garlic, crushed
1 small onion (80g), finely chopped
300g lean minced beef
1/4 teaspoon dried oregano leaves
1 medium tomato (100g), peeled, chopped
2 tablespoons tomato paste

Tomato Sauce:
2 tablespoons water
1 small onion (80g), finely chopped
425g can tomatoes
pinch dried oregano leaves
2 teaspoons chopped fresh parsley

Drop cannelloni gradually into a large saucepan of boiling water, add oil and cook until cannelloni are tender, drain, place into bowl of warm water. Fill drained cannelloni with filling. Place in single layer in ovenproof dish, top with sauce, sprinkle with cheese and bake in moderate oven for about 30 minutes (or microwave on HIGH for about 10 minutes).

Tasty Mince Filling: Heat oil in frying pan, add garlic and onion, stir constantly over heat until onion is soft (or microwave on HIGH for about 3 minutes). Add mince, cook, stirring, until browned (or microwave on HIGH for about 2 minutes). Add oregano, tomato and tomato paste, cook, uncovered, for 5 minutes (or microwave on HIGH for about 2 minutes).

Tomato Sauce: Heat water in small saucepan, add onion, cook until soft, add undrained, crushed tomatoes and oregano. Bring to the boil, reduce heat, simmer, uncovered, for about 5 minutes or until slightly thickened, add parsley, mix well.

Serves 4.
