The Ultimate Chocolate Cake
175g dark plain chocolate, broken into pieces
2 tsp instant coffee granules
1/4 tsp bicarbonate of soda
400g light brown soft sugar
3 medium eggs
2 Tbsp sunflower oil
90ml full-fat plain yoghurt
300ml double cream
1 Tbsp golden syrup
225g plain chocolate, finely chopped
1 tsp vanilla extract
# Place butter, chocolate and coffee in a pan with 142ml cold water.
# Stir together over a very low heat until all ingredients are melted.
# Remove from heat and cool for 15 minutes.
# Sift flours, bicarb and cocoa into a large bowl.
# Stir in the sugar and make a well in the centre.
# Whisk eggs, oil and yoghurt together and pour into the bowl.
# Add chocolate mixture and whisk until smooth.
# Pour into a greased and lined deep 20cm cake pan.
# Bake at 170C for about 1 hour 40 minutes or until a metal skewer inserted into the middle comes out clean.
# Cool in the tin.
# Fill and top cake with Fudge Frosting and white and dark chocolate curls.
# Place cream and syrup in a heavy-based pan and heat to just simmering.
# Remove from heat, add the chopped chocolate and stir for about 2 minutes until the chocolate melts.
# Add the vanilla and whisk until smooth.
# Pour into a bowl and chill for about 1 1/2 hours until thickened.
# Whisk with an electric mixer for 2 minutes until fluffy.
