Makes about 16
50g butter or margarine
1/4 cup caster sugar
3/4 cup cooked mashed pumpkin
2 1/2 cups self-raising flour
1/2 cup milk
1/2 cup ricotta or cottage cheese
1. Beat butter and sugar. Add egg. Beat well. Stir in pumpkin.
2. Fold through flour and milk alternately to form soft dough. Turn dough onto lightly floured board. Knead. Press dough flat until about 3cm thick. Cut into rounds using a scone cutter.
3. Place muffins on greased baking tray. Brush tops with milk. Bake in hot oven (200Â°C) for 15 minutes to 20 minutes.
4. Serve muffins split with ricotta or cottage cheese.
