Peanut Butter Bar

This is one my mother used to make, and is INCREDIBLY moreish.

125g butter
1/2 cup soft brown sugar
1/2 cup Peanut Butter (crunchy if you don’t have peanuts)
1 egg, beaten
1 cup flour
1 tsp baking powder
1/2 cup roasted peanuts

Melt the butter, brown sugar and peanut butter in a saucepan large enough to mix all the ingredients.
Add egg and beat with a wooden spoon to combine.
Sift flour and baking powder into the saucepan.
Add peanuts and mix until combined.
Pour into an 18 x 28cm slice tin (lined), and bake at 180C for 20 minutes.
Allow slice to cool and ice.

Icing
100-200g chocolate melts
1/4 cup crunchy peanut butter

Melt both over boiling water, either in a heatproof bowl or a double saucepan, then spread over the base.
Icing can be made as thick as you like it.

  1. OMG this is the BEST peanut butter bar recipe EVER!! I made it and doubled the recipe to make more and it was all gone in a day!
