Orange Lemon Cake
1 cup sugar
2 cups almond meal
1 tsp baking powder
Place washed, unpeeled fruit in a saucepan, cover with water, bring to boil and simmer for 1 hour until soft.
Drain, halve, and remove pips and whiz in food processor. Skin included.
Beat eggs and sugar together, add fruit, almonds and baking powder.
Pour into lightly oiled 18cm ring or springform pan and bake at 180C for 1 hour or until top feels firm.
Cool in tin.
