Mixed Berry Layered Pavlova
150ml egg whites (approximately 4)
1 1/2 cups icing sugar
4 cups cream, whipped
2 x 120g punnets raspberries
2 x 120g punnets blueberries
Preheat the oven to 120C. Place the egg whites in the bowl of an electric mixer and beat until stiff peaks form. Gradually add the sugar and beat until the mixture is thick and glossy. Spoon the mixture into two 20 x 30cm rectangular slice tins lined with non-stick baking paper and cook for 25 minutes or until the meringue is crisp to touch. Turn off the oven and allow the meringues to cool in the oven for 30 minutes. Remove from the oven and allow to cool completely.
To assemble, layer one of the meringue slices with the whipped cream and berries. Top with the remaining meringue and finish with a layer of cream and berries
