Chocolate Chip Meringue Cookies
2 large egg whites
1/2 cup sugar
1 teaspoon vanilla extract
3 tablespoons unsweetened cocoa powder
1/2 cup semisweet chocolate chips
In large mixing bowl, beat egg whites on high speed of electric mixer until they hold stiff peaks. Beat in sugar, 1 tablespoon at a time. Add vanilla extract. Reduce speed to low and beat in cocoa powder. Gently fold in chocolate chips with a rubber spatula. Drop mixture by rounded teaspoonfuls onto foil or parchment lined baking sheets, or baking pads. Bake at 250°f for 1 hour. Turn off oven leave cookies in oven for 2 hours longer. Remove from pan; store in airtight container.
