600g cauliflower, cut into florets
2 Tbsp (40g) butter
1/4 cup (40g) plain flour
1 2/3 cups (425ml) milk
2 tsp mild English or Dijon mustard
1/4 tsp nutmeg, ground
salt and freshly ground black pepper
1 cup grated tasty cheese
1. Preheat the oven to 200c.
2. Place the cauliflower in a microwave or oven-proof dish. Add 2 Tbsp water, cover with plastic and microwave on high for 4 minutes. Drain the water from the cauliflower and set aside.
3. Heat the butter in a saucepan, stir in the flour. Remove from the heat and slowly add the milk, stirring continuously. Return to taste and along with half the cheese. Stir until the mixture is smooth and thickens.
4. Pour the sauce over the cauliflower, top with remaining cheese and bake in the oven for 12-15 minutes or until golden on top.
