Beef Stew

Serves 4

2 carrots, peeled and chopped
1 zucchini, peeled and chopped
700g stewing steak
1 teaspoon Nuttelex margarine
1 brown onion, peeled and roughly chopped
1 tablespoon tomato paste
1 tablespoon corn maize flour sifted
1/2 cup (125ml) water and extra as required
pinch of pepper and salt (optional)

Pre-heat oven at 200°C.
Remove any fat from the steak and slice.
Melt the margarine in a pan and lightly brown the onion, add the meat just to cook through. Then add the cornflour and tomato paste and stir well to combine. Add the water and stir again.
Transfer all ingredients into covered casserole dish and place in oven. Cook for approximately 1 1/2 hours.

Add extra water, if required, during cooking and additional 1-2 tablespoons of tomato paste for a richer sauce.
