3 teaspoons lemon juice
2/3 cup milk
2 and 1/3 cups SR flour
1 and 1/3 cup sugar
1 teaspoon bi carb soda
180g butter (melted)
2/3 cup mashed banana (2 very ripe)
2/3 cup chopped walnuts (optional)
# Add lemon juice to milk and let thicken a little.
# Sift flour into bowl, add sugar, soda, butter, bananas, milk and eggs.
# Mix well BY HAND DO NOT put in a blender or mix master.
# Add the nuts.
# Bake in a deep greased tin for 45 minutes or so (might take a bit longer) at 180c.
For cream cheese icing:
60g cream cheese
1/2 tsp vanilla essence
120g icing sugar
