Sugar-Coated Peanuts

Sugar-Coated Peanuts

500 g raw peanuts (with red skins on)
2 cups sugar
2 cups water
1/2 teaspoon red colouring

1. Combine all ingredients in a large frying pan.
2. Stir over low heat until sugar has dissolved.
3. Bring to the boil and boil steadily, uncovered, for 10 minutes.
4. Remove from heat. Stir constantly with fork until sugar crystallises around peanuts.
5. Turn out and cool on tray.
