Chocolate Snowballs

Chocolate Snowballs

85g Copha/Kremelta
1 Tbsp Icing Sugar
2 Tbsp Cocoa
1 Cup Cornflakes
1 Cup Cake Crumbs
1/4 Cup Desiccated Coconut
1 Tbsp Jam
1 Tbsp Fruit Juice
Extra Coconut to roll the `snowballs’ in.

Melt the Kremelta in a saucepan over a low heat or in a microwave oven.
Mix icing sugar, cocoa, cornflakes, cake crumbs, coconut, jam, juice and melted Copha/Kremelta until well combined.
Refrigerate until firm.
Shape teaspoonfuls of mixture into balls and roll in the extra coconut.
Set in the fridge.

Makes 24.
