Chocolate Fudge

395g condensed milk
150ml milk
450g brown sugar
100g unsalted butter
1 Tbsp liquid glucose
125g dark cooking chocolate
cooking oil spray
50g white chocolate

1. Put both milks, the sugar, butter and glucose into a heavy-bottomed pot. Bring to the boil, turn the heat down and gently simmer for 15 mins, stirring regularly. Then remove from the heat and set aside to cool for 5 mins.
2. Add the dark chocolate and beat using a hand mixer for about 5 mins, until thick and creamy.
3. Then lightly oil a slice tin and line with baking paper. Pour in the chocolate mixture, evenly spread out to the corners and cool completely until solid.
4. When ready, cut the fudge into squares. Melt the white chocolate and drizzle over the top.
