Apricot and Pear Crumble
125g no-soak dried apricots
450g pears – peeled, cored and sliced
1 Tbsp clear honey
50g fresh breadcrumbs
25g brown sugar
1 Tbsp plain flour
25g low-fat spread, melted
Pinch ground nutmeg
Put the apricots in a saucepan with the pear slices and honey. Add 1 Tbsp of water and simmer gently, covered for 5 minutes to soften.
Pre-heat the oven to 180c.
Spoon half the pear and apricot mixture into an overproof dish.
Mix together the breadcrumbs, sugar, flour, spread and nutmeg until all ingredients are combined. Scatter half over the pears and apricots. Top this with the remaining pear and apricots and then scatter the remaining crumble mixture over this.
Bake for 25 minutes and serve warm.
