Weekender Biscuits

125 g margarine
85 ml sugar
1 egg
165 ml sultanas
250 ml self-raising flour
375 ml cornflakes, lightly crushed

Cream margarine and sugar until light and fluffy. Add egg and beat well. Fold in sifted flour and sultanas. Drop teaspoonfuls of mixture into corn flakes and roll lightly. Place on lightly greased baking sheet allowing room for spreading. Bake at 180ÂșC for about 20 minutes.

  2. Thank you so much for publishing this recipe – a real throwback to my childhood, when my Mum used to make them quite often. Unfortunately, I’ve (temporarily) lost her recipe scrapbook, so your site was a real godsend when I had leftover Cornflakes and had a hankering for these. My husband loves them. I also sometimes add some choc chips along with the sultanas, if I have any in the pantry. Thanks again – a great recipe!
