Tuna and Potato Patties

Tuna and Potato Patties

Makes: 30 patties

500 g potatoes, peeled, and cut in quarters
1/2 cup milk
325 g canned tuna in brine, drained
1 spring onion, chopped
1/2 cup wholemeal breadcrumbs, fresh
1/4 cup olive oil, (or 60ml)
1 egg

1. Steam potatoes until tender. Cool.
2. Place potatoes in bowl, add milk and mash with a fork.
3. Mix in tuna, green onion, parsley, egg and breadcrumbs.
4. Shape into 30 patties.
5. Heat oil in a large frying pan and cook until golden and crisp on both sides.
Drain on absorbent paper.

Notes: For people who need more energy (kilojoules) in their diet, Use tuna in oil. Add 1/2 cup cheddar cheese. Deep fry.

  1. I got about a dozen out of this. I think 30 is if you want small ones .. mine where medium sized. I didn’t cool down the potato’s .. I mashed and added a bit of marg and milk and cheese. After that it seemed to cool right down on it’s own. Then I added the rest of the ingredients but left out the parsly.
