Taco Rice

Taco Rice

1.5 kg mince
3 onions, diced
3 packages taco seasoning mix
3 cans (16 oz) canned diced tomatoes
6 cups cooked rice
6 cups shredded cheddar cheese

1. Brown meat and drain.
2. Combine meat, onion, taco seasoning packets, cooked rice and tomatoes in large saucepan. Simmer about 5 minutes.

To Freeze:
Cool, label and freeze in bags.
Also freeze separate bags with 2 cups shredded cheese for each meal.

To serve:
Thaw completely. Serve with flour tortillas, lettuce, tomatoes and enclosed cheese.
