Sweet Corn, Chicken and Dumpling Soup

Makes 1 litre, Serves 4

1 tablespoon oil
1 onion, finely chopped
1 litre chicken stock
310g can creamed corn
1 cup shredded barbecue chicken
6 green onions, finely sliced
250g packet Ho Mai Mini Dim Sims (see note)

1. Heat oil in a large saucepan. Sauté onion until tender.
2. Blend in stock and corn. Bring to the boil. Reduce heat. Stir in all remaining ingredients.
3. Simmer for 3 to 5 minutes or until dumplings are cooked. Transfer to airtight containers in serving-sized portions. Refrigerate until required.
4. Reheat soup in the microwave on HIGH (100%) power for 2 to 3 minutes. Serve drizzled with a little soy sauce if desired.

NOTE: Available from the frozen food section of the supermarket.
