Strawberry Muffins

2 cups of self-raising flour
1/2 cup sugar
1 egg lightly beaten
1 cup milk
4 tablespoons melted butter
1 punnet strawberries, chopped

Preheat oven to 200ºc. Lightly grease a 24 capacity mini muffin tin, or a 12 capacity large muffin tin. Mix all dry ingredients, add milk, egg and melted butter, mix lightly. Stir in the chopped strawberries; do not over mix as mixture is meant to be lumpy. Spoon Into the muffin tins until 1/4 full and bake for 20 to 25 mins. Test by inserting a skewer until it comes out clean. Leave to cool in the tin for 5 mins before turning onto a wire rack to cool.
