Strawberry Mousse

Strawberry Mousse

1 punnet strawberries (250g), washed, hulled
1/2 cup castor sugar
1 1/4 cup cream
1 Tbsp lemon juice
1/3 cup boiling water
2 tsp gelatine
2 egg whites

Place strawberries, sugar, lemon juice and cream into electric blender. Place boiling water into small bowl, add gelatine, stir until dissolved. Add to strawberries in blender. Blend on medium speed for 30 seconds or until just combined. Beat egg whites in a bowl until soft peaks form, fold in strawberry mixture. Pour into 4 glasses. Refrigerate.
