Scout’s Cupcakes

Makes 12

2 eggs
thickened cream
vanilla essence
3/4 cup castor sugar
1 cup self-raising flour

  • Into a 1 cup metric measuring cup place the eggs. Fill to brim with thickened cream.
  • Beat for 1 minute.
  • Add a splash of vanilla essence and sugar.
  • Beat for 3 minutes.
  • Fold in the sifted flour.
  • Place in 12 patty pans, filling each only halfway.
  • Bake in a moderate oven till light golden and cakes spring back when lightly touched in the centre (approximately 15 minutes.)
