Red-Hot Beef with Cashews

Serves 4

500g boneless beef sirloin, sliced thinly
1 tsp veg oil

Marinade:
1 tbsp sesame seeds
1 garlic clove, chopped
1 tbsp fresh root ginger, finely chopped
1 red bird-eye chilli, chopped
2 tbsp dark soy sauce
1 tsp red curry paste

To Finish:
1 tsp sesame oil
4 tbsp unsalted cashew nuts
1 spring onion, thickly sliced diagonally
cucumber slices to garnish

Place beef into a large Non-Metallic bowl.
Toast sesame seeds in a heavy based pan and place in a pestle and mortar with garlic, ginger and chilli. Grind to a smooth paste. Add soy and curry paste, mix well.
Spoon paste over beef and mix to coat well. Cover and refrigerate min 3 hours or preferably overnight.
Heat a heavy fry pan or griddle and brush with veg oil. Cook beef strips until lightly browned. Place in hot serving dish.
Heat sesame oil in small pan and quickly fry cashews taking care not to burn. Add spring onions and stir fry 30 seconds. Sprinkle over beef and garnish with cucumber.
