Pumpkin, Leek and Prosciutto Pizza

300g pumpkin, peeled, deseeded, thinly sliced
1 leek, sliced
1 (430g) Turkish pide, split
2 x 50g sachets tomato pizza sauce
6 slices prosciutto
1 Tbsp shredded fresh sage

1. Preheat oven to 220°C. Spray a large non-stick frying can with oil. Place over medium-high heat. Add one-third of the pumpkin. Cook for 1-2 minutes or until brown. Transfer to a plate. Repeat in 2 more batches with remaining pumpkin.
2. Add leek to pan and cook, stirring, for 2-3 minutes or until soft. Remove from heat.
3. Place the pide, cut-side up, on a large baking tray. Spread with the pizza sauce and sprinkle with half the cheese. Top with pumpkin, leek and prosciutto. Top with sage and remaining cheese. Season with salt and pepper.
4. Bake for 15 minutes or until golden brown and hot. Cut into slices. Serve.
