Passionfruit Slice

Base:
1 cup self raising flour
1 cup shredded coconut
1/2 cup sugar
125g melted butter

Topping:
125g cream cheese
395g can condensed milk
Pulp of 4 passionfruits
4 tbsp lemon juice

To prepare base:
Combine flour, coconut and sugar in a bowl. Pour over melted butter and mix. Press mixture into a lamington tin. Bake in a 180°C oven for 10-15 minutes. Allow to cool.

To prepare topping:
Beat cream cheese in a mixing bowl till creamy. Gradually beat in condensed milk, passionfruit and lemon juice. Spread topping evenly over cooled base. Refrigerate until topping is firm. Cut into squares and serve.

Makes 24 squares.
