Orange Rum Sherbet

Orange Rum Sherbet

2 teaspoons gelatine
3/4 cup water
3/4 cup sugar
1 cup orange juice
1 1/2 tablespoons lime juice
1/2 cup light rum
1 tablespoon grated orange rind
few grains salt

1. Soften the gelatine in one-quarter cup of hot water. Cool.
2. Combine the remaining water and the sugar and boil one minute. Add the gelatine and stir until dissolved. Add the orange and lime juice, rum, orange rind and salt. Strain and cool.
3. Chill, process/beat mixture and freeze.
