300g unsweetened muesli (without nuts)
pinch of nutmeg
1 tsp ground cinnamon
60 g runny honey
125g brown sugar
3 ripe bananas
180g fresh or semi dried dates chopped
juice of 1 lemon
Preheat oven 180c, grease baking tin.
Mix muesli and spices together.
Put honey, sugar and butter in a saucepan and heat slowly until the sugar is dissolved.
Poor the mixture through the muesli and mix.
Put half the muesli in the tin.
Mix the bananas, dates and lemon juice together and spread on top of the muesli.
Top with the rest of the muesli.
Bake for 25-30 minutes.
Cut in bars or squares.
Makes 12 large bars.
