Mexican Cottage Pie

1 tablespoon olive oil
1 small brown onion, chopped finely
500g beef mince
1 clove garlic, crushed
35g packet taco seasoning mix
300g can Tomato Supreme (canned tomato with capsicum and celery)
125g can corn kernels (rinsed and drained)
3/4 cup (180ml) beef stock
600g prepared mashed potato
1 cup (120g) grated tasty cheese

1. Heat oil in a large frying pan; cook onion and garlic until softened. Add beef and stir over a high heat for about 5 minutes or until browned.
2. Add seasoning mix, cayenne pepper, Tomato Supreme, corn and stock – bring to the boil. Reduce heat and simmer for 3 minutes.
3. Preheat grill to hot.
4. Place meat mixture into a large casserole dish. Spoon hot potato over meat and sprinkle with cheese; sprinkle few breadcrumbs over the top.
5. Grill until cheese is melted and browned.
