Macadamia Nut and Riberry Friand

Makes 12 – 18 Friands

4 egg whites
2/3 cup macadamia nut meal
1/3 cup plain flour sifted
1 cup sifted icing sugar
75 g butter (melted)
1 heaped tablespoon of riberry confit
icing sugar for dusting

Preheat the oven to 180°C.
Grease and flour a friand tin. These are typically 12 in a tray.
Combine in a bowl and mix together the almond meal, icing sugar and flour.
Slowly stir in the eggwhites until just combined then stir in the melted butter.
Place the batter into the friand tin till they are 3/4 full.
Then Spoon the glace riberries on to the top of each friand.
Bake for about 25 minutes till golden. The friands should spring back when touched.
Remove from the oven, then turn friands out onto a wire rack to cool. Dust friand with icing sugar to serve.
