Lemon and Cardamom Drops

Lemon and Cardamom Drops

1 large egg
100g pure icing sugar
50g ground almonds
100g ground rice
1tsp cardamom
finely grated rind 1 large lemon
extra icing sugar for coating

Preheat oven to 180C. Whisk egg and icing sugar until very pale. Stir in remaining ingredients and mix thoroughly. Put extra icing sugar into a small bowl. Line baking sheets with Bakewell paper. Wet hands and roll mixture into balls the size of a large marble. Roll in icing sugar and place on baking sheet (allow room for spreading). Bake 10-12 minutes until pale brown.
