Makes 20 to 24
50g caster sugar
2 egg whites
50g plain flour, sifted
few drops of vanilla essence
1. Cream the butter and sugar together until light and fluffy. Whisk the egg whites lightly and gradually beat into the creamed mixture with the flour and vanilla essence.
2. Place in a piping bag fitted with a 1cm plain nozzle and pipe 7.5cm (3 inch) lengths on greased and floured baking sheets; alternatively, pipe into rounds.
3. Bake in a preheated moderately hot oven, 200°C (400°F), Gas Mark 6, for 10 minutes; the biscuits should be pale golden, but darker around the edges. Transfer to a wire rack to cool.
