Jelly Slice

First Layer:
1 packet Marie biscuits (or use 20 vanilla-flavoured wafers), crushed
3/4 cup (6 ounces) melted butter

Combine the crushed cookies with melted butter in a bowl. Press mixture into a 9 x 9-inch foil-lined baking pan

Second Layer:
2 (14-ounce) cans sweetened condensed milk
Juice from 2 lemons
1 1/2 tablespoons unflavoured gelatine
1 cup boiling water

Beat together ingredients in a bowl and pour on top of first layer. Refrigerate.

Third Layer:
2 (3-ounce) packages raspberry or strawberry gelatine
2 1/2 cups boiling water

Dissolve gelatine in boiling water. When cooled, pour on top of second layer.

Makes about 24 squares.

Note: Be sure to pour the flavoured gelatine (third layer) on top of the second layer before it starts setting – if not, it will not stick.
