Jaffa Tea Loaf

Jaffa Tea Loaf

melted butter
140g unsalted butter, soft
200g self-raising flour
250g caster sugar
1 1/2 tsp baking powder
6 Tbsp milk
3 large eggs
grated rind of 1 orange
3-4 Tbsp fresh orange juice
75-100g dark cooking chocolate

Preheat oven to 160°C.
Brush a loaf tin with melted butter and line with baking paper.
Beat butter, flour, 200 gm caster sugar, baking powder, milk, eggs and orange zest with a hand mixer. Then spoon the mixture into the loaf tin, level the top and cook in the oven for 40-45 mins until risen, slightly firm to the touch and golden brown.
When the cake is ready, gently heat orange juice with the remaining caster sugar until melted. Spoon over the cake and allow to cool in tin.
Then remove cake from the tin and allow it to cool completely on a rack.
Melt the chocolate, drizzle over the top and leave to set.
