Ice cream custard
Age: 12 months +
3 Tbsp butter
3 Tbsp flour
2 cups milk
1-2 Tbsp brown sugar
1/2 tsp vanilla essence
In a medium sized pot melt the butter, then stir in the flour. Add 1 and 1/2 cups of milk and bring to the boil, stirring all the time. Take off the heat.
Mix everything else with the rest of the milk in a bowl. Stir this into the pot, then put it back on the heat and stir all the time over fairly low heat, until the pudding bubbles round the edges and looks evenly smooth and thick.
Take off the heat and cool by standing the pot in cold water. Lie a plastic bag over the surface of the pudding to stop it forming a skin.
Serve in pudding bowls with peaches alongside, or layer it with chopped, fruit in glasses.
This old-fashioned pudding is especially good with canned peaches or layered with fruit purees.
