Ginger Loaf

Ginger Loaf

1 cup soy flour
1/2 heavy cream
2/3 tsp baking soda
2 eggs
1/4 cup water
2 tsp sugar substitute
1/2 tsp each of grated ginger, nutmeg, cinnamon
butter to grease pan
** adjust spices to taste

Preheat oven to 375’F. Grease small loaf pan and put aside.
Combine all dry ingredients, set aside.
Separate eggs, beat whites till fluffy.
Recombine egg whites and yolks and add sweetener.
Combine all ingredients and mix until dry ingredients are fully incorporated.
Do not over mix, bread will not rise.
Pour into pan and bake for approximately 25 mins until cake tester comes out clean.

Servings: 4-6 slices (med size).
