1/2 cup lemon juice
1/2 cup castor sugar
1/2 cup water
1 egg white (beat until firm)
1. Place sugar and water in a small pan. Stir over a low heat until sugar is dissolved. Bring to boil. Reduce heat, simmer uncovered 10 minutes. Allow to cool.
2. Stir the strained lemon juice into cooled mixture, mix well. Pour mixture into shallow tin, freeze approximately 1 hour or until mixture is just firm.
3. Remove from freezer, turn mixture into bowl, beat until smooth with fork. Fold in firmly beaten egg white. Return to tin, freeze until firm.
