4 egg whites
1 cup castor sugar
1 tsp vanilla
3/4 tsp white vinegar
Beat egg whites with 1/3 cup of sugar until stiff.
Gradually add all sugar and beat well until all the sugar is dissolved.
Add vanilla and vinegar.
Beat for 1 minute.
Pile mixture onto a foil covered pavlova plate (approx) 7″ across and 2″ deep).
Bake for 1 1/2 hours in a slow oven. Turn oven off and leave cool in oven with door open.
Top with whipped cream and your favourite fruit.
