Diabetic Christmas Pudding

Diabetic Christmas Pudding

1 cup of mixed fruit
30g butter or margarine
210ml milk
60ml sweet sherry

Mix together in a saucepan and bring to the boil.

Remove from heat then add:

1 tsp carb soda
1 cup self raising flour
1 tsp mixed spice

Mix together and place in a steaming bowl.
Steam for 1 to 1.5 hours (can also be done in a cloth).
