Date Loaf

1/2 cup sugar
1 teaspoon ground ginger
1/4 teaspoon nutmeg
1 teaspoon mixed spice
1/2 teaspoon bi carbonate soda
1 cup chopped dates
1 tablespoon butter (1 x 20ml spoon)
1 1/2 cups S.R. flour
1 cup boiling water
1 tablespoon butter (greasing)

Preheat oven to 180C.

1. Grease an 18cm cake tin.
2. Place sugar, ginger, nutmeg, chopped dates, mixed spice, soda and butter into a bowl.
3. Pour boiling water over these ingredients and mix well until butter has melted.
4. Add sifted flour and stir until thoroughly mixed.
5. Pour into greased tin and bake in a moderate oven for 30-35 minutes.

Variations and Additions
1 C Sultanas
1 C mixed fruit
