Preheat the oven to 180Â°C (fan-forced). Remove crusts from 1 sourdough loaf, then cut the loaf into 1cm cubes. Toss in a bowl with 2 tablespoons extra virgin olive oil, 1 crushed garlic clove and 1 teaspoon thyme leaves. Spread the cubes on a baking tray lined with non-stick baking paper. Season with salt and ground black pepper. Roast in the preheated oven for 15 minutes or until golden.
