udon noodles: available fresh and dried, these Japanese broad white wheat noodles.
ugli: a citrus fruit hybrid between a grapefruit and a tangerine native to Jamaica. It is available around the country from Winter to Spring. It has an acid-sweet flavour and is an excellent source of vitamin C.
umeboshi plums: despite the name, these are in fact Japanese apricots that have been coloured red and pickled in salt. They have a tangy, salty flavour. They are served with white rice and miso soup as part of the traditional Japanese breakfast, and are also used to flavour sauces and salad dressings.
