3 cups icing sugar
3 cups desiccated coconut
1 teaspoon vanilla
1 egg white
cochineal or pink food colouring
# Sift icing sugar.
# Add coconut, vanilla and beat egg white.
# Melt copha and allow to cool slightly. Add to mixture.
# Divide mixture and colour half with cochineal or pink food colouring (or whatever colour you like).
# Spread white mixture onto a well greased slice/lamington tray.
# Cover with pink half.
# Chill and cut into pieces.
