Chicken Nuggets

1 slice bread
150g (approx) chicken breast fillet, chopped
1 egg yolk
1 small potato, grated
1 small zucchini, grated
1/4 cup finely grated cheese
sprinkle of seasoning to taste
breadcrumbs for coating
a little olive oil

Blend or process bread, chicken and cheese until combined. Add egg, potato, zucchini and seasoning. Shape tablespoons into nugget shapes and coat in breadcrumbs. Drizzle lightly with olive oil and bake in a 180c oven for about 15 minutes or until cooked through, turning once to evenly brown both sides.
