Carambola Biscuits

Carambola are also know as star fruit or five corners.

3 cups of unsifted flour
3/4 tsp sodium bicarbonate
1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp ginger
220g chopped carambola
1 1/2 cups of sugar
2 Tbsp golden syrup
2 eggs
2-3 cups rolled oats
250g chopped nuts
120g unsalted butter

Mix flour, bi-carb, baking powder, spices.
Add remaining ingredients. Mix well.
Place dessertspoon fulls of mixture on ungreased biscuit tray and press down with a fork.
The mixture doesn’t spread out much during the cooking process.
Bake for 15 mins at 210’C.
