Fresh Breadcrumbs:
To make fresh breadcrumbs, cut a 1-2 day-old crusty loaf into 2cm squares. Place in a food processor, a few squares at a time, processing to a crumb consistency (how fine or coarse depends on the recipe). Makes 3 cups.

Dried Breadcrumbs:
To make dried breadcrumbs, preheat the oven to 160°C (fan-forced). Remove crusts from 1-2 day-old sliced loaf. Place slices on a baking tray and bake in the preheated oven for 20-25 minutes or until golden. Remove from the oven and process in a food processor. Store in an airtight container in the freezer and defrost before using. Makes 1 1/2 cups.
