Bread and Butter Pudding

Bread and Butter Pudding

3 eggs
1 1/2 tablespoons honey
2 1/2 cups soymilk
1 tablespoon margarine
8 slices rye/grain bread, crusts removed
3/4 cup dried fruit salad chunks

1. Place eggs, honey and soymilk in a bowl. Whisk well. Spread margarine onto bread and cut into triangles.
2. Place a layer of bread into a round ovenproof dish and sprinkle with 1/2 cup of the fruit. Gently pour half the custard mixture over the fruit. Place remaining bread into dish in a circular pattern, add remaining custard. Sprinkle with remaining fruit.
3. Place pudding into a large baking pan filled with enough water to come halfway up the side of the pudding dish. Bake in a moderate oven, 180°C, for 40 minutes or until set and browned on top.

  1. When so many diabetics have problems with conversions, why do diabetic recipes on so many sites not have the Exchanges. They give like what seems to be great recipes, however, when it comes to someone who is very limited as to their carb levels, it would sure help a lot if the diabetic changes could be added for much easier use.

  2. I’m not a nutritionist/dietitian etc so wouldn’t have a clue how to go adding things like that to recipes. I have however uploaded another Bread and Butter Pudding recipe with the Nutrition Data per serve 🙂
